How to Substitute your Baking Recipes
Changing your recipes is a great way to invent new baking results, but tinkering with cakes and cookies is not as straightforward as with other recipes!
Focus on flavors rather than changing base ingredients: Extracts, liqueurs, herbs, spices, and such can be exchanged for one another, as can chopped nuts or dried fruit or chocolate pieces -- all without altering the ingredients providing the structure and texture of the recipe. Most can be added to most cookies, scones, biscuits, etc., but they may sink to the bottom of cakes. Here is one of our favorite tips, start with a cake recipe that already has some of the basic ingredients and substitute some new ones. Otherwise, you may be inventing a new upside-down cake, literally.
